Garlic Cherry Tomato Pasta Recipe
Incase you don’t remember or you aren’t a carb lover like myself, than you might have forgotten that back in October, the 25th to be exact was World Pasta Day. While I am typically not someone who celebrates these “made up” holidays, I can’t turn down a plate of food, so the boyfriend and I took this opportunity to cook up something extra special and yummy to commemorate the day!
When it comes to pasta, there are so many ways to prepare it, but with Barilla’s latest Pronto pasta which is available in four delicious shapes (Half-Cut Spaghetti, Penne, Cut Macaroni and Rotini), it will help make your prep faster and easier. Ready in just about 10 mins, I love that I can enjoy a delicious and filling pasta dish for the boyfriend and I with little effort and wait time!
It’s as easy as preparing it in one pan – no need to wait for water to boil, and no draining required.
For this recipe, I wanted to create a light, simple but classic pasta dish. With the pronto pasta, I was able to create this sauce-less pasta while focusing on vibrant and delicious vegetables (like these gorgeous cherry tomatoes) and great Barilla pasta.
I have to admit, when it comes to my relationship with my boyfriend there is no doubt that he is the amazing cook between us. He grew up with his Lola (grandmother) teaching him the ins and outs of cooking, using the right ingredients and really understanding the process of cooking, while I was busy as a young athlete and never quite spending time in the kitchen.
That is something I am so thankful for. Nothing is quite as amazing as being with a man who can cook!
So, as much as I love to cook and bake, I know that my skills are limited and I’m still growing in the kitchen, so I love when brands like Barilla think about us little guys and know that time and serious skill is not something that we are all blessed with.

INGREDIENTS:
- Barilla Pronto Half-Cut Spaghetti
- 1.5 cups cherry tomatoes (some halved)
- 5 cloves of garlic minced
- 7 basil leaves chopped finely
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 teaspoon fresh cracked black pepper
- Grated fresh parmesan cheese for garnish and taste
INSTRUCTIONS:
- Preheat oven to 375°F. In a medium bowl, toss together tomatoes, garlic, olive oil, salt and pepper. Transfer to a baking sheet and spread into an even layer. Bake for 20-25 minutes, or until tomatoes are soft and very fragrant. Remove from oven and set aside.
- Pour the whole box of pasta into a large skillet (approximately 12 inches in diameter). Pour 3 cups (750ml) of cold water into the pan ensuring the water covers the pasta.
- Cook pasta on high, stirring regularly until most of the water is absorbed, about 10 minutes, but may vary by stove. Optional: add a bit of salt to taste.
- Add garlic tomatoes and freshly chopped basil to the skillet of pasta and stir to combine all ingredients.
- Plate and add grated parmesan after plating.
