Already home to El Caballito, the Mexican tequila cantina that opened earlier this year, the King St. West area now welcomes Los Colibris, a Polancostyle restaurant focused on exceptional hospitality, authentic cuisine and inspired design.
Los Colibris (which means “The Hummingbirds” in Spanish) is a 150 seat upscale restaurant featuring two private dining rooms that seat 15 and 50 and allows for any occasion where it be intimate private dining or private event experiences. Where theres a number of casual taco joints, Los Colibris is doing something different and offering an authentic taste mixed with an upscale feel.
Executive chef Elia Herrera (originally from Veracruz, Mexico) worked closely with general manager/sommelier Marissa Kelly to create a worldclass menu unique to Toronto’s Mexican cuisine offering.
“My mother and grandmother have greatly influenced my cooking,” said chef Elia Herrera. “I’m thrilled to be bringing my recipes, inspired by several generations of cooking, to Toronto’s food enthusiasts. My commitment to combining high quality ingredients with authentic Mexican techniques and flavours will create a oneofakind dining experience at Los Colibris.”
In addition to the menu’s offerings, an open ceviche kitchen, killer cocktail list and a wine program featuring some of the best bottles from Spain and California make this spot the perfect destination for any meal or gathering. On arrival, guests can sip on one of Los Colibris’ curated cocktails, like their namesake, The Colibri (Tromba Blanco, Campari and sweet vermouth, $13) or La Morena (Tromba Blanco, tamarind, lime, $12).
An upscale, highquality dining destination, Los Colibris finds its home in a grand space most recently occupied by Barootes restaurant. The interior has been transformed by Douglas Design Studio and the Mazenga Group contractors, who created a space fit for a heightened Mexican dining experience.
“When designing the space, we strongly followed the spirit of authentic eateries in Condesa, Mexico City,” said Jeffrey Douglas, principal partner at Douglas Design Studio. “Our goal was also to differentiate Los Colibris from the cantina downstairs, allowing guests to truly feel the distinction in intimacy when sitting down to eat.”
This summer, Los Colibris and sister restaurant El Caballito will be joined by a 1,800squarefoot patio that can seat 100, featuring a bar and a makeyourown taco station. Doesn’t it sound like taco heaven!
