Pineapple Coconut Popsicles Recipe + Giveaway
I can’t believe we are only just over a week until August is over and September will soon begin. I feel like it was literally yesterday when the weather was getting hot and I was getting all ready to bring the bike out and head to the Toronto islands.
I get that summer isn’t exactly over when August ends, but I can’t help but get that ‘Back to School’ feeling when the temperature drops a tad with every passing day. Though I love the fall season, I am still holding onto summer as much as possible and making the most out of all my free time. That includes making some summer-appropriate treats!
I’ve recently teamed up with my fave coconut water, Thirsty Buddha. Instead of just a simple review or an entire article about how much I love it, I thought I would get in the kitchen and create something delicious. Just to prove that summer isn’t over, I’ve put together this simple but yummy Pineapple Coconut Popsicle recipe that is perfect for the last remaining warm weekends.

Ingredients:
- 1.5 Cups of Thirsty Buddha Coconut Water
- 1/2 Cup of Pineapple Juice
- 2 Cups of Cubed Pineapple
- Yoplait Coconut Pineapple Banana Yogurt
- Coconut Shavings for Toppings
Instructions:
- Add Coconut Water, Pineapple Juice and Pineapple to blender and blend until smooth and frothy
- Pour mixture into popsicle moulds and after 15 minutes in the freezer, stick popsicle sticks into moulds. (The mixture should be somewhat stiff enough to make the sticks stand up straight). Freeze overnight
- Next day, take popsicles out of moulds and dip half of the popsicle into the yogurt
- Sprinkle Coconut Shavings over the yogurt for decoration and place on parchment paper and put back into the freezer overnight.
- Share the popsicles with your friends!

thank you for the delicious + healthy pineapple coconut popsicles recipe + contest! I love to ride my bike along the lakeshore only during summer. I’m not one of the brave Torontonians that bike all year round. I, also, love eating at restaurant and café outdoor patios with family + friends. These would be my two main activities to pursue to the fullest before summer ends. cheers!

My must-do’s before summers end: The CNE, Toronto Cider Festival, enjoy the last few summer weekends at the islands!, try Arctic Bites ice-cream, enjoy a glass or two or three of sangria on a patio!, have a BBQ, and catch a few movies at TIFF! Gotta love the end of summer in the city!
